Ingredients (For 4 Servings):
- 4-6 chicken drumsticks or thighs.
- 3 medium potatoes, peeled and cut into large cubes.
- 1 large sweet potato, peeled and cut into cubes.
- 1 lemon, sliced thinly.
- 2 garlic cloves, crushed.
- 1/4 cup olive oil.
- 1/2 cup fresh lemon juice (about 2 lemons).
- 1/4 cup water or chicken broth.
- 1/2 teaspoon sweet paprika.
- 1/2 teaspoon cumin (optional).
- Salt and pepper to taste.
- A handful of chopped cilantro or parsley (for garnish).
Preparation Method:
Preparing the Chicken:
- Heat a little olive oil in a large, deep pot.
- Fry the chicken drumsticks on both sides until they are lightly golden. Remove from the pot and set aside.
Frying the Vegetables:
- In the same pot, add the potatoes and sweet potato and fry for 5-7 minutes until they begin to slightly golden.
Adding Flavors and Liquids:
- Add the crushed garlic, lemon juice, lemon slices, olive oil, water or chicken broth to the pot and season with salt, pepper, paprika, and cumin. Mix gently.
Cooking the Pot:
- Place the chicken drumsticks on top of the vegetables.
- Cover the pot and cook on a low-medium flame for about 45 minutes until the chicken is well cooked and the vegetables are soft.
- During cooking, you can gently turn the chicken and ensure the liquids do not evaporate completely (add a little water if necessary).
Serving:
- Sprinkle chopped cilantro or parsley on top.
- Serve hot alongside white rice, couscous, or a fresh salad.
Tip:
For those who love deeper flavors, you can add a little lemon zest to the seasoning or a quarter cup of white wine to the liquids.
