Spring Rolls: A Delicious Twist for Summer

Here's a great solution for summer: light, quick, fun summer rolls. In Israel, they're known as spring rolls, likely because summer abroad is more like our warm spring.
The summer roll is similar to an egg roll, but lacks the greasy dough and isn’t fried – a small but important difference.
Summer rolls, also known as spring rolls, come to us from faraway Vietnam. They're filled with crunchy veggies and usually dipped in peanut sauce.

Filling ideas for summer rolls:
- Egg, tuna, and pickles
- Meaty: Strips of pastrami, lettuce, and tomato
- Dairy: Cheeses and fresh vegetables
- Stir-fried: Stir-fried vegetables with soy sauce and halloumi cheese or tofu for a vegetarian version
- Iraqi Sabich (the tastiest): Hummus, eggplant, egg, pickles, and sumac spice
- American: Smoked salmon with cream cheese for Ashkenazi, or soy cheese for Sephardic
- Dutch: Filled with green cabbage, red cabbage, carrots, and optional mayo for extra flavor.
- You can add apple slices, pineapple cubes, and walnuts to create a Waldorf summer roll – nothing says "fusion" like this.

In reality, there's an endless variety, limited only by your imagination.
How do you make them?
It's quite simple.

Start with the filling. Once the filling is ready, it's time to begin.
Take a rice paper sheet. Soak it in a bowl of water for about half a minute.
If soaked too long, the paper will become too soft.
If soaked too short, the paper will be tough and hard to roll.

Lay the damp paper on a flat surface, fill with your chosen mixture, fold the edges inward, and roll it up.
Place on a serving plate.
That's it.
It's ready.
