He can make Havdalah until Tuesday evening, and he should only recite the blessing of Boreh Peri HaGafen and the blessing of Hamavdil Bein Kodesh Lechol, but he should not recite the blessings on the spices and the candle (Shulchan Aruch and Rama, Orach Chaim 297:6). Furthermore, he should not say the verses that are typically recited before Havdalah (Likutei Mahari”h, Seder Havdalah, Motzei Shabbat, D”H and see Pri Megadim. And see also Ba’al HaChut Ya'ir in his book Makor Chaim, Brief Laws, 297:6, that until Tuesday evening—that is, until sunset on Tuesday).
Initially, he should aim to make Havdalah as early as Sunday, because the diligent hasten to perform mitzvot, and also because it is forbidden for him to eat before making Havdalah since he is capable of making it (Mishna Berura, Sk 16).
However, according to the opinion of Rav Ovadia Yosef zt'l, Havdalah can be made (the blessing of Boreh Peri HaGafen and the blessing of Hamavdil, as mentioned above) only until the end of Sunday, and this is only on the condition that he has not tasted anything since the conclusion of Shabbat (Chazon Ovadia, Shabbat, Part 2, page 285).
