Is selecting something to give to your friend considered immediate selection?
It is permitted to select an onion from a salad or peas from rice and give it to your friend to eat immediately.
Similarly, selecting a utensil to lend to your friend, even if your friend will use it after some time, is considered immediate selection and is permitted [Yalkut Yosef 3, 297].
If one has a mixture of fruits, is it permissible to select a large quantity to place before guests?
If guests arrive on Shabbat, and one selects and places food before them, one should not select a full bowl when knowing they will only taste a little of it, because what the guests don't eat would be considered selected not for immediate use [Yabia Omer 10 page 102 column 2].
