What blessing is recited over Mufleta?
Mufleta that is made from dough kneaded with water and salt, made thin and baked on a pan with a little oil so it doesn't stick, its blessing is Mezonot since people do not typically make it the basis of a meal [as stated in Shemesh U'Magen 4:30]. If one establishes a meal around it, one recites Hamotzi and Birkat Hamazon.
What blessing is recited over Matzah?
The Sephardic custom is to recite the blessing of Mezonot over matzah throughout the year, and it is considered pious conduct to eat matzah only during a meal (Chazon Ovadia 61). For soft matzot or moist matzot, the blessing is Hamotzi [Responsa of the Rishon LeZion].
