How is coconut oil different from other oils and how does it benefit health?

In recent years, coconut oil has been frequently mentioned as a healthy oil. The question arises: coconut oil is a saturated fat, and we've written several times that saturated fats are something we try to avoid consuming as they can lead to the narrowing of blood vessels and sometimes even their blockage. So how can coconut oil be considered healthy?

However, in recent years it has been found that the saturated fat in coconut is different in structure from other saturated fats, making it non-harmful - and furthermore, very beneficial to health when consumed in moderate and balanced amounts.

What are the special benefits of coconut oil? It turns out there are many advantages. Firstly, coconut oil has a mild and very tasty flavor. Coconut oil contains lauric acid, which is also found in breast milk, and its primary function is to protect the infant (in breast milk) from bacterial and viral infections and to strengthen the infant's immune system. It also contains caprylic acid, which has anti-fungal properties including against Candida fungus.

Unlike other fatty acids that are digested and broken down with the help of pancreatic enzymes and bile salts, coconut oil is absorbed directly and does not require the mediation of pancreatic enzymes and bile salts. This fact has several implications: even those who have had their gallbladder removed and are limited in their fat intake can consume this oil, as it does not require bile mediation. Also, those with pancreatic function issues can consume coconut oil since it does not require the pancreas's assistance for absorption. Coconut oil gives a feeling of satiety for a long period, which prevents the need to eat frequently, thus helping to maintain a normal weight. The oil accelerates metabolism, which also contributes to maintaining a healthy weight. It also helps in maintaining sugar and cholesterol balance, among other numerous and important benefits.

How is coconut oil used? First, ensure that you are purchasing cold-pressed coconut oil. The color of coconut oil is white and beautiful. It appears in solid form. It is advisable to ensure the oil is organic, which guarantees good quality. It should be noted that coconut oil that has undergone a heating process loses its substantial nutritional value; therefore, it can be used like margarine and spread on bread and rice cakes, mixed in various shakes, or combined in salads. Additionally, its advantage is that it is one of the oils suitable for cooking, baking, frying, and sautéing due to the fact it is composed of saturated fatty acids, which gives it stability at high temperatures.
