After one of my lectures, a young man approached me and confessed: "I don't eat any raw vegetables or fruits, only cooked food." I told him that if he wants to maintain good health, it's essential to eat raw foods like vegetables and fruits. Why should you always start a meal with a raw vegetable salad, and what exactly is the issue with cooked food?

After one of my lectures, a young man approached me and confessed: "I don't eat any raw vegetables or fruits, only cooked food." I told him that this is a negative thing, and if he wishes to maintain good health, he should start consuming raw foods - vegetables and fruits. Many people I meet in the clinic avoid raw and fresh foods. In this article, I wish to address the importance of increasing the intake of raw foods and reducing cooked, grilled, and roasted foods. What, then, is the damage in cooked food?

A. Cooking changes the composition and quality of proteins. Essentially, proteins are not directly absorbed into our body. They must first undergo a breakdown process into amino acids, which are the building blocks of proteins in the body, and in this way, they are absorbed into the blood and various tissues. During cooking, the protein undergoes various physical and chemical changes. An example of this change is the hardening of an egg and the curdling of milk. The amino acids are no longer in their natural state, which decreases their value.

B. Heating oil causes it to spoil, oxidize, and essentially become toxic. In practice, almost all natural foods contain fat, so if one bases their diet solely on cooked food, it will be based on oxidized, toxic oil.

C. Cooking destroys a significant portion of vitamins. Vitamins are very sensitive to light exposure, different heat levels, and more. For example, vitamin C breaks down during cooking. Vegetables that are very rich in this vitamin, such as broccoli, peppers, cauliflower, green peas, green beans, and others usually eaten cooked - the vitamin present in them will not survive. Therefore, to preserve the various vitamins, it is recommended to eat fresh vegetables, fruits, and sprouts.

D. Cooking destroys enzymes. The body's metabolism requires enzymes. Their presence in food during digestion is a necessary condition for the body to utilize the food. Enzymes are easily destroyed at relatively low temperatures. Therefore, eating raw vegetables and fruits will ensure the supply of enzymes to assist the digestive system function and often prevent constipation and various digestive issues.

E. Overeating: Cooked food does not require much chewing, and thus leads to overeating, creating a high load on the systems involved in the digestion process, exhausting them, and may even lead to constipation and various digestive disorders, and over time, aging them.

Therefore, it is essential to make sure to eat raw foods. It is advisable to always start a meal with a raw vegetable salad. This way, we ensure the intake of enzymes, eat less, and maintain our health. To health.
