Pasta is one of the most popular and delicious dishes (especially before Passover, when we want to finish leftover pasta in the pantry), but often we find ourselves frustrated when the pasta sticks together and turns into a mush.
Many people think the solution lies in oil or water, but if you want to avoid this problem in the most effective way, here's a small secret that can upgrade your cooking.
The reason pasta sticks during cooking is that starch is released in the first few seconds. Therefore, if you stir the pasta immediately at the beginning of cooking, you can reduce the sticking by 90%. All you need to do is remember to stir the pasta in the first 2 minutes after you mix it with the water. All of this, of course, is provided you pour at least one liter of water for every 100 grams of pasta.
Many people add oil to the cooking water thinking it will reduce the sticking, but this doesn't really help. The oil may prevent the pasta from absorbing the sauce properly, so it's best not to rely on it.
