The required quantity for a concluding blessing (from "Daily Halachah" based on the rulings of Maran Rabbi Ovadia Yosef, of blessed memory):

On anything a person eats, they must recite a "first blessing," such as the blessing "Shehakol" or "Ha'etz." Even if one eats only a small amount, as long as it is for eating purposes, a blessing is required. (However, if one only tastes it to adjust seasoning, no blessing is required for this tasting.) Therefore, if someone chews flavored gum, even though they swallow very little of it, they still must bless for enjoying its taste. Similarly, for drinking, a blessing is necessary even if only one drop is consumed.

This requirement applies solely to the first blessing; a concluding blessing is only said after a "significant" amount, known as a "kezayit," which is 27 grams, and for drinks, the quantity is "revi'it," approximately 81 grams.

Additionally, the eating or drinking must occur within a time frame that allows them to be considered as one act. If someone eats a "kezayit" volume of bread over an entire day, bit by bit, they cannot recite Birkat Hamazon afterward. Instead, the consumption of a "kezayit" must be within the time it takes to eat half a loaf, with differing opinions suggesting this is either five minutes or approximately seven and a half minutes (with other opinions existing). Therefore, it is advisable always to consume a "kezayit" (especially at Shabbat meals) within four and a half minutes to fulfill all opinions.

Regarding a concluding blessing for beverages, one must drink a "revi'it" (81 grams) in one go. If there are breaks between sips, no concluding blessing is recited. Hence, someone eating soup with a spoon doesn’t recite a concluding blessing for the soup since it isn’t drunk in one go. Similarly, one doesn't recite a concluding blessing for coffee or tea when they are hot because they can't be consumed in one go.
