OnBissli, the blessing is Mezonot (first blessing)

And at the end of eating, the blessing is Al HaMichya (last blessing)

The amount to eat in order to be obligated in the last blessing (from "Halacha Yomit" based on the rulings of the late Rabbi Ovadia Yosef):

For everything a person eats, he must say the "first blessing," such as the blessing "Shehakol" or "Ha'etz." Even if he eats only a small amount of that food, he is required to bless it, provided he is eating it for the sake of eating. (However, if he is only tasting the food to adjust its seasoning, he does not say a blessing at all.) Therefore, someone chewing flavored gum, even if he swallows very little of it, is still required to bless due to the enjoyment of the gum's flavor. Similarly, if he drinks something, he must bless it even if he drinks just a single drop of that beverage.

This applies specifically to the first blessing, but the last blessing is said only when one has eaten an "important eating," which is the amount of "K’zayit," meaning twenty-seven grams, and for drinking, the amount is "Revi'it," which is eighty-one grams.

Additionally, the eating or drinking must be done within a time frame that connects the consumption. If a person eats a "K’zayit" piece of bread over an entire day, bit by bit, he certainly cannot recite Birkat Hamazon afterward. Rather, the "K’zayit" eating must occur within the time frame of "Achilat Pras," and the authorities disagree on the duration of this, with some saying it is five minutes and others saying it is around seven and a half minutes (and there are additional views on this matter). Therefore, it is recommended to always consume a K’zayit (especially during Shabbat meals) within four and a half minutes to satisfy all opinions.

For the last blessing on a beverage, one needs to drink a Revi'it of the beverage (which is eighty-one grams) all at once, because if he drinks and pauses between sips, he does not recite the last blessing at all. Therefore, someone consuming soup with a spoon does not recite the last blessing on that soup, since he did not drink a Revi'it all at once, and similarly, someone drinking hot coffee or tea does not recite the last blessing because he cannot drink it all at once.
