The Delicious Healthy Chocolate Cake With a Kick You Didn’t See Coming

As someone who’s always on the lookout for creative — and admittedly brave — solutions, I thought to myself, “Let’s make a small batch; worst case, it’ll still turn out fine.” I genuinely didn’t expect it to be this delicious and surprising. And here’s the funny part: it’s my little secret. My husband and the kids are convinced it’s just a wonderfully surprising chocolate cake… they have no idea how adventurous it actually is.
So with that little confession out of the way — let’s delve right into it.
Ingredients:
2 cups cooked black beans, or mixed beans
4 eggs, or alternatively 2 ripe bananas
1/4 cup coconut oil
1/2 cup natural silan or honey
1/4 cup coconut sugar
1/4 cup low-fat cocoa powder or cocoa nibs
1 teaspoon aluminum-free baking powder
1/2 teaspoon baking soda
1 tablespoon apple cider vinegar
For those who like it sweeter, you can add more silan or agave syrup.
For the frosting:
1 tablespoon cocoa
2 tablespoons natural silan
1 tablespoon coconut oil
Optional: 50 grams of 85% chocolate
Preparation Instructions:
Preheat oven to 180°C.
In a food processor, blend the black beans that have been soaked overnight and cooked until soft. Puree until smooth.
Add the rest of the ingredients and blend for another 1-2 minutes.
Transfer to a baking pan or individual muffin cups.
Bake for about 35-40 minutes, until a toothpick comes out clean.
Remove and let cool.
For the frosting: Melt the frosting ingredients in a double boiler. Pour over the cake once it's cooled.
Optional: Sprinkle coconut over the chocolate.
