If you ask an Ethiopian what they do when they’re feeling tired and weak, you’ll probably get a one-word answer: muk.
At first, it might not mean much to you, but if you look a little deeper, you’ll discover that it’s an incredibly healthy porridge. Made mainly from teff flour — a staple of Ethiopian cuisine — this porridge is exactly what anyone feeling run-down needs. A generous bowl of teff porridge is said to get you right back on your feet.
What’s remarkable about this porridge is its simplicity.
To make it, you only need three basic ingredients: teff flour, water, and honey.
What many people don’t know (until now) is that teff flour is rich in complete protein, excellent dietary fiber, and a variety of vitamins — especially B vitamins, which the body loves. It’s also packed with magnesium, iron, potassium, and phosphorus, making it a true superfood.
How to Make Teff Porridge
In a small pot, mix one cup of teff flour and half a cup of honey into three cups of lukewarm water. Stir well.
(If you prefer a thicker porridge, add a few extra tablespoons of flour as it cooks. If you don’t love very sweet porridge, simply reduce the honey.)
The key is stirring continuously until the mixture becomes smooth and lump-free.
Cook over a low flame, stirring constantly so the teff doesn’t stick to the bottom.
When the porridge bubbles, thickens, and becomes silky-smooth, you’re ready for toppings — preferably healthy ones to keep the benefits intact: coconut, seasonal fruit, cinnamon, nuts, and more cinnamon if you like.
