If you ask an Ethiopian what they do when they're feeling tired and weak, you'll probably get a one-word answer: muk.
At first, you might not get it, but if you dig a little deeper, you'll find out it's an incredibly healthy porridge. Made primarily from teff flour, a staple in Ethiopian cuisine, this porridge is just what anyone feeling run-down needs. A generous serving of teff porridge is said to get you back on your feet.
What's amazing about this porridge is its simplicity.
To whip it up, all you need are three basic ingredients: teff flour, water, and honey.
What many don't know about teff flour (until now) is that it's rich in complete protein, excellent dietary fibers, and vitamins, especially B vitamins that our bodies absolutely love. It also contains magnesium, iron, potassium, and phosphorus, making it a superfood.
How to Make Teff Porridge:
In a small pot with 3 cups of lukewarm water, mix in a cup of teff flour and half a cup of honey. Stir well. (If you prefer a thicker porridge, you can add more tablespoons while cooking. If a very sweet porridge isn't your thing, feel free to cut back on the honey). The key here is stirring until you get a smooth paste with no lumps.
Make sure the flame is relatively low, and keep stirring continuously so the teff doesn't stick to the bottom.
When the porridge bubbles, thickens, and becomes smooth, feel free to add toppings as you wish (preferably healthy ones, to keep the benefits): coconut, seasonal fruits, cinnamon, nuts, and more cinnamon.
