Zucchini Marvels: Crafting Ravioli and Lasagna the Unique Way

Zucchini has a soft skin and a buttery texture inside. It's time to explore the health advantages of zucchini.
They are rich in vitamins, minerals, and fibers, along with antioxidants that neutralize free radicals.
On one hand, zucchini is low in calories, but on the other hand, they are filling and satisfying.
Wonderful dishes can be prepared with them:
Zucchini soup, zucchini chips, stir-fried zucchini.
But perhaps one of the most enjoyable things you can do with zucchini is to prepare thick "noodles" for a healthy Italian-style dinner.

Ravioli and Lasagna (Flourless) with Zucchini "Noodles"
Step One – Prepare the Sauce
In a bit of olive oil, sauté diced onions and tomatoes.
Season with salt and basil, either dry or fresh, if available.
Once the onions and tomatoes have melded together, add a small can of tomato paste and a quarter cup of water.
Let the mixture bubble and then lower the heat for another 5 minutes.
*Winning Sauce – You can save this recipe and use it as a sauce on pizza toast, for cooking meatballs, or even fish.

Step Two – Prepare the Filling
In a medium bowl, combine cottage cheese (or ricotta),
half a cup of grated Parmesan cheese,
and an egg.
Season with salt, pepper, and basil.

Step Three – Make the Zucchini "Noodles"
Cut and discard the zucchini ends.
Using a vegetable peeler, slice each zucchini lengthwise into thin strips.
These are our noodles.

Step Four – Assemble the Ravioli
Arrange two strips of zucchini noodles so they overlap lengthwise.
Lay two additional strips horizontally over them.
Place a tablespoon of filling in the center.
Fold the ends of the zucchini towards the center.
Do this with all four ends.

Step Five – Ravioli
Place the ravioli in a baking dish, folds down.
Cover with sauce and grated yellow cheese.

Another Option: Make Lasagna Instead
In a loaf pan, layer some slices of zucchini noodles.
Cover with cheese filling and then sauce.
Lay more layers of zucchini, cheese, and sauce.
Top with grated yellow cheese.

Bake for 30 minutes at 350°F.
Allow the ravioli/lasagna to cool for a few minutes, but not entirely. We want that stretchy cheese effect when slicing and serving.
It stands so deliciously on its own that it doesn’t need any sides. Perfect for dinner.
