As Tu Bishvat approaches, the almond tree blossoms, bringing with it scents and treasures of nutritional value.

Almonds are considered the purest nut and are often called the health nut — whole almonds contain more nutrients per serving than any other nut!

Rich in calcium, almonds also boast a wealth of essential minerals like phosphorus, potassium, and zinc, which greatly benefit bone health. They also contain remarkable components such as essential fatty acids, folic acid, antioxidants, magnesium, copper, a significant amount of vitamin E, flavonoids, and riboflavin (vitamin B2).

In addition, almonds are an excellent source of iron, with high percentages of unsaturated fats and dietary fibers. The unsaturated fat in almonds contributes to lowering bad cholesterol levels (LDL) in the blood and improving good cholesterol levels (HDL), reducing the risk of blood clots and high blood pressure. This makes almonds great for heart health.

Research published in the American Journal of the Heart Association found that almonds have proven health benefits in boosting fat burning. They help reduce body fat and assist in waistline slimming. Additionally, almond consumption increases feelings of fullness. Studies have shown that eating almonds with meals prevents sharp and rapid spikes in blood sugar levels, making them beneficial for diabetics. This effect also aids in slowing down the oxidation of fats after meals, highlighting almonds' importance in reducing cholesterol levels.

Almonds benefit the digestive system and effectively counter excess stomach acidity. They also enhance cognitive abilities and brain functions.

They can be used to enrich baked goods. For those avoiding gluten, almond flour is an excellent substitute in baking and desserts. Almond flour has a naturally sweet taste, resulting in moist and delicious baked treats.

Of course, it's important to consume almonds unroasted. Roasting diminishes their health advantages.

Cow's milk can be replaced with almond milk: Take 10 blanched almonds and 2 tablespoons of honey, blend in a food processor with half a cup of water for fifteen minutes. Then add another liter of water, blend for about 5 minutes, and store refrigerated.
