Common Foods You Should Never Store in the Fridge

This may surprise you, but improper food storage could be ruining the quality of your meals. According to Prof. Amparo Gamero, an expert in health sciences and food technology, several popular foods, such as garlic, bread, coffee, bananas, and chocolate, should never be refrigerated. While fridges are typically seen as the go-to for keeping food fresh, they can actually do more harm than good in certain cases.
Prof. Gamero explains that cold temperatures can damage the taste and texture of some foods, and even accelerate spoilage. For example, storing garlic in the fridge can cause it to sprout faster and develop a bitter taste. It’s best kept in a cool, dark pantry, away from potatoes, which release gases that speed up sprouting.
Bread is another fridge-averse item. Gamero recommends storing it in a paper bag at room temperature, or freezing it for longer shelf life.
What about chocolate? If you're accustomed to storing it in the fridge, you may be harming its creamy texture and rich flavor. The ideal spot for chocolate is a cool, dry place away from direct sunlight, in its original packaging or an airtight container.
Bananas, especially when still green, should also be kept out of the fridge. Cold temperatures slow their ripening and can turn the peel brown prematurely. Once they’re ripe, refrigeration can be used to slow down further softening.
Coffee, whether in bean or ground form, loses its distinct aroma when stored in the fridge. Instead, keep it in an airtight container in a cool, dry place.
