Watercress, scientifically known as Rorippa nasturtium-aquaticum, is considered a 'meteoric' staple in folk medicine.

The Arabs, who have been using it for centuries, call it 'Jirjeer'. It often grows near water sources and in damp places. Chefs around the world love this vegetable for its unique culinary flavor. Personally, I enjoy making stuffed dumplings with it (recipe at the end of the article), but as a fresh addition to a vegetable salad, it's undeniably tasty, providing an essential boost for vascular health, fresh skin, normal muscle and joint function, and improved clotting functions.

The taste of watercress is slightly spicy and cannot be found everywhere, but if you manage to obtain it from nurseries or specialty shops, it is worth adding to fresh salads, soups, and stuffed dishes.

A full cup of fresh cress contains vital vitamins and minerals necessary for our body's health, such as vitamin A rich in beta-carotene, vitamin C, and a high level of vitamin K.

Pregnant women will be pleased to know that watercress is rich in folic acid (vitamin B9) in relatively large amounts.

After many experiments, I 'discovered' these dumplings, which I love most when mixed with Indian kitchen spices. However, the truth is you can try watercress in many different and varied foods.

What do you need to make the dumplings?

A package of ready-to-fill crispy dough, defrosted and cut into squares.

Two medium-sized boiled potatoes

A teaspoon of mustard seeds

1 chopped onion, fried

A tablespoon of ground ginger

A bunch of finely chopped watercress

A bunch of finely chopped cilantro

A teaspoon of cumin

A teaspoon of tandoori mix (Indian spice)

A teaspoon of garam masala (Indian spice)

2 teaspoons of lemon juice

Salt and black pepper to taste

A cup of thawed frozen peas (optional)

 

Preparation method:

Fry all the filling ingredients together in a little olive oil.

Fill each square, close it well, and fry each dumpling in deep oil until golden on both sides.
