How should you consume different peels, and what are the "secrets" of each one? Let's begin:

Eggplants
Have you heard of polyphenols? These substances help activate the body's natural defense mechanisms, helping it maintain stability and deal with "enemies." Eggplant skin is very rich in polyphenols but loses a significant percentage of them when cooked or baked.
Beets
Beet peels are very rich in vitamins A and C, as well as minerals and other substances like selenium, potassium, magnesium, and calcium.
Grapes
Grape skins contain a large amount of an antioxidant chemical called resveratrol, and they are well known for helping to combat heart disease and cancer.

Radishes
