The Battle Over Bread

Since ancient times, bread has been considered a staple food in human life. Some claim that without bread, they do not feel full, while others say they feel weak without it. Is this really the case?

To begin, I would like to note that despite the centrality of bread, I encounter many people who complain that bread actually makes them feel bad. Some report phlegm appearing after eating it, others suffer from severe heartburn, and some feel heaviness. Let's examine this a little, based on the different components of bread:

Flour: The wheat grain consists of three parts: the kernel itself, the bran, and the germ. The bran contains the essential elements of the wheat – vitamins, minerals, protein, enzymes, and more. Also, the bran assists in better digestion of the flour, which helps prevent constipation and the like. White flour removes the kernel's bran and germ, leaving only the kernel, which is primarily caloric and devoid of any nutritional value. Therefore, it raises blood sugar levels (high glycemic index), which can lead to weight gain, diabetes, and more. On the other hand, whole wheat flour does not lack those things missing in white flour, although it does have several disadvantages (I will not address them in this article), but it is certainly preferable to white flour.

Yeast: Many have developed an allergy to baking yeast. There are also many who suffer from a fungus in the digestive system, which yeast strengthens in its presence, although many are unaware of this.

In light of this, it appears that attitudes towards bread are more complex than traditionally thought, and it should not be taken for granted. Based on what I mentioned above, I will offer some practical advice regarding the consumption of bread to make it easier to digest: A. Today, there are different flours such as rye, spelt, and more. Those who experience undesirable effects after eating regular bread should look for bread made from these flours.

B. Sometimes it is advisable to check why bread does not sit well with them. Perhaps there is an issue with their digestive system, such as the fungus mentioned earlier, and therefore it is recommended to consult a professional. Those suffering from various allergies should be checked for sensitivities to yeast or fungus in the digestive system.

C. The digestion process of bread begins in the mouth with enzymes present in saliva. Therefore, it is important to chew the bread properly so that the saliva mixes well with the bread, which will ease further digestion.

D. It is advisable to avoid eating bread made from white flour. It is also not recommended to consume a lot of bread, even from whole wheat flour.

E. It is recommended to add plenty of vegetables to the consumption of bread.
