Winter brings an opportunity to slow down and enjoy homey moments. When rain knocks on the window and the wind whistles outside, it's the perfect time to try new recipes, nurture health, and focus on family. Winter calls us to experiment with the flavors and colors of pumpkin, sweet potato, carrot, and butternut squash, which become ideal ingredients for soups.
Why Orange?
Orange vegetables are rich in vitamins, minerals, and dietary fibers. They contain high amounts of beta-carotene, which the body converts to vitamin A, essential for maintaining a strong immune system, healthy skin, and good vision. Additionally, they contain antioxidants that help the body cope with free radicals and reduce the risk of winter illnesses.
Recipe for a Rich, Comforting, and Indulgent Orange Soup Everyone Loves
Ingredients:
- 4 tablespoons of olive or canola oil
- 2 large chopped onions
- 1 carrot, sliced into rounds
- 2 medium sweet potatoes, peeled and diced
- 2 medium potatoes, or one large
- 1 small butternut squash or half a large butternut squash, peeled and diced. Butternut squash comes in various sizes; when you see a large one, you'll understand. The rule: the more butternut squash in the soup, the thicker and sweeter it will be. My recommendation - add more.
- Water to cover the vegetables
- Salt and black pepper to taste
- ½ teaspoon turmeric
- ¼ teaspoon cinnamon (don't skip it!)
- Black pepper and salt
Preparation:
Heat a large pot over medium heat and add the oil. Sauté the onion until it becomes translucent. Add all the chopped vegetables to the pot, and stir well so they are coated in oil and flavors.
Add the turmeric, cinnamon, salt, and pepper. Add water to cover the vegetables and bring to a boil. Lower the heat and cook for about 30 minutes, or until the vegetables are completely soft.
Using an immersion blender, blend the soup to a smooth texture. If the soup is too thick (in our home we love it very thick, it's up to personal taste), add a little water.
Serving: Pour the soup into individual bowls, garnish with cilantro or parsley leaves (for kids, of course, no garnish is needed), and serve with a slice of fresh bread or soup croutons.
