And at the end of eating, one says 'Borei Nefashot' (the concluding blessing)

The amount of consumption required to be obligated in the concluding blessing (from "Halacha Yomit" based on the rulings of the late Maran Rabbi Ovadia Yosef zt"l):
For everything a person eats, they must say a "first blessing", such as the blessings "Shehakol" or "Ha'etz". Even if one eats only a little of that food, they must still bless it, as long as they intend to eat it. (However, if they only taste it to adjust seasoning or similar, they do not bless that tasting at all). Therefore, someone chewing flavored gum, even though they are swallowing very little, must bless for enjoying the taste of the gum. Similarly, anyone who drinks anything must bless, even if they only intend to drink a single drop.
However, this applies only to the first blessing, but the concluding blessing is said only when one has had "significant consumption", which is measured as a "k'zayit", equivalent to twenty-seven grams, and for drinks, the measure is a "revi'it", which is eighty-one grams.
Additionally, the food or drink must be consumed within a time frame to combine the portions. For example, if someone eats a "k'zayit" of bread throughout the day, piece by piece, they cannot say the concluding blessing afterwards. The consumption of a "k'zayit" should be within the timeframe of "eating a half loaf", with opinions varying on the exact duration, including five minutes, seven and a half minutes, or other views. Therefore, it is correct to always eat a "k'zayit" (especially during Shabbat meals) within four and a half minutes to fulfill all opinions.
Regarding the concluding blessing over drinks, one needs to drink a "revi'it" of the drink (eighty-one grams) at once. If someone drinks and pauses between sips, they do not say a concluding blessing. Therefore, someone eating soup with a spoon does not say a concluding blessing over that soup since they did not drink a "revi'it" all at once, and likewise, someone drinking coffee or tea when hot does not say the concluding blessing, as they cannot drink it all at once.
