The amount of consumption required to be obligated in an after blessing (from "Daily Halacha" by the rulings of Maran Rabbi Ovadia Yosef, of blessed memory):
On everything a person eats, they must recite a "first blessing," such as "Shehakol" or "Ha'etz." Even if one eats only a little of that food, they are required to recite a blessing on it, as long as the intention is to eat. (However, if the only purpose is to taste it to adjust seasoning and similar, no blessing is recited on such tasting). Therefore, someone who chews flavored gum must recite a blessing for enjoying the flavor, even if they swallow only a very small amount of it. Similarly, one should recite a blessing even if they intend to drink only a single drop of a beverage.
This is all specifically regarding the first blessing, but an after blessing is only recited when one has consumed an "important quantity," which is the measurement of "k'zayit," approximately twenty-seven grams; and for drinks, the measure is "r'vi'it," which is eighty-one grams.
Additionally, the consumption should be within a timeframe that allows the eating or drinking to combine together. If a person eats the measure of a "k'zayit" bread crumb by crumb throughout the entire day, they certainly cannot recite Birkat HaMazon afterward. The consumption of a "k'zayit" must occur within the timeframe known as "eating a pras," with different opinions as to what this timeframe is, some saying it is five minutes, others saying approximately seven and a half minutes (there are other opinions as well). Therefore, it is advisable always to consume the amount of a k'zayit (especially at Shabbat meals) within four and a half minutes to fulfill all opinions.
Regarding an after blessing for a beverage, one must drink a r'vi'it of the beverage (which is eighty-one grams) all at once; if one drinks with pauses between sips, no after blessing is recited. Therefore, someone who drinks soup with a spoon does not recite an after blessing for the soup, since they have not consumed a r'vi'it at once. Similarly, someone who drinks hot coffee or tea does not recite an after blessing, because they cannot drink it all at once.
