Halacha: What Blessing Do We Say on Cream?

The amount of consumption required to be obligated in a concluding blessing (from "Daily Halacha" of the rulings of Maran Rabbi Ovadia Yosef z"l):

For everything a person eats, one must say an "initial blessing" over it, such as the "Shehakol" or "Ha'etz" blessing. Even if he eats only a little of that food, he must still bless over it, as long as he came to eat it for eating's sake. (But if he only came to taste that food in order to fix it with seasoning and such, he does not bless on this taste at all). Therefore, someone who chews flavored gum, even if he swallows only a small amount of it, still must bless for enjoying the taste of the gum. Likewise, whoever comes to drink something, must bless over it even if he drinks only one drop of that beverage.

However, all this specifically refers to the initial blessing, but a concluding blessing is only said when an "important" amount of food was eaten. An "important" amount corresponds to the measure of "Kezayit", which is twenty-seven grams, and in drinking, the measure is "Revi'it", which is eighty-one grams.

Additionally, the eating or drinking must occur within a timeframe where they combine with each other. For if a person eats over the entire day a "Kezayit" of bread, piece by piece, certainly he cannot afterward say "Birkat Hamazon". Rather, the "Kezayit" amount of eating must occur within the timeframe of "Achilat Pras", and the rabbis debate how long this is, with some saying it is five minutes and others saying it is about seven and a half minutes (and there are other opinions as well). Therefore, it's correct to always be careful to eat a "Kezayit" measure (especially during Shabbat meals) within four and a half minutes to satisfy all opinions.

Concerning the concluding blessing on a liquid, one must drink a "Revi'it" of the beverage (which is eighty-one grams) in one go, because if one drinks and pauses between gulps, no concluding blessing is made at all. Therefore, someone who drinks soup with a spoon does not bless a concluding blessing on drinking that soup, because they did not drink a "Revi'it" measure in one go, and likewise someone who drinks coffee or tea when they are hot does not bless a concluding blessing on them, because they cannot drink them in one go.
