For the Krembo, the blessing for the biscuit is Mezonot, for the cream - Shehakol (first blessing)

At the end of eating, according to Sephardic authorities, Shehakol covers the biscuit (last blessing)

The amount of food required to obligate a last blessing (from "Daily Halacha" based on the rulings of Maran Rabbi Ovadia Yosef of blessed memory):

For any food a person eats, they must say a "first blessing", such as the blessing "Shehakol" or "Ha'etz". Even if one eats only a small amount, they are obligated to bless it, as long as they are eating for the purpose of eating. (However, if one is merely tasting to adjust seasoning or similar, no blessing is required). Therefore, someone who chews flavored gum, even if they do not swallow but a very small amount, is still required to bless for the enjoyment of the gum's taste. Similarly, anyone who drinks must bless even if they drink just a drop.

However, this only applies to the first blessing, while a last blessing is only recited when one has eaten a "significant amount", which is the size of an "olive" measurements, meaning twenty-seven grams, and for drinking, it is a "revi'it", which is eighty-one grams.

Furthermore, the eating or drinking must occur within a time frame where they can be combined. If one eats an "olive-sized" piece of bread throughout an entire day, one crumb at a time, they certainly cannot recite the blessing afterward. Instead, the "olive-sized" portion must be eaten within the timeframe of "eating a half loaf", with authorities differing on this time frame, with some saying five minutes and others about seven and a half minutes (and there are other views). Therefore, it's advisable to always eat the olive-sized amount (especially during Shabbat meals) within four and a half minutes to fulfill all opinions.

For the last blessing on drinks, one must drink a revi'it of the beverage (which is eighty-one grams) all at once, as pausing between sips means no last blessing is recited. Therefore, someone drinking soup with a spoon or coffee or tea when they are hot does not recite a last blessing, as they cannot drink a whole revi'it at once.
