The quantity required for a concluding blessing (from "Daily Halacha" of the rulings of the late Maran Rabbi Ovadia Yosef, of blessed memory):
For every item someone eats, they must recite an "initial blessing," such as the blessings "Shehakol" or "Ha'etz." Even if one only intends to consume a small amount, a blessing is required as long as the intent is for eating. (However, if one only tastes food to adjust the seasoning, no blessing is required.) Therefore, someone chewing flavored gum, even though they swallow very little, must bless for the enjoyment of the flavor. Similarly, anyone drinking any beverage, even just a drop, must bless.
All this applies specifically to the initial blessing, whereas the concluding blessing is only recited after a "significant consumption," measured as the amount of a "kazayit," which is twenty-seven grams. For liquids, the measure is a "revi'it," which is eighty-one grams.
Additionally, the eating or drinking must occur within a timeframe that combines the total amount. If someone eats a "kazayit" of bread over an entire day, piece by piece, they definitely cannot recite Birkat Hamazon afterward. The consumption of a "kazayit" must occur within the time known as "Achilat Pras," with opinions varying if this is five or about seven and a half minutes (and other views exist). Therefore, one should ideally consume a kazayit, especially during Shabbat meals, within four and a half minutes to fulfill all opinions.
Regarding the concluding blessing for drinks, one must drink a revi'it (eighty-one grams) in one go; if there is a pause between sips, no concluding blessing is made. Therefore, someone who eats soup by spoon doesn't bless for drinking the soup as no revi'it was consumed in one go. Similarly, drinking hot coffee or tea doesn’t warrant a concluding blessing as it cannot be drunk all at once.
