The amount of food required to obligate a last blessing (from "Daily Halacha" by rulings of Rabbi Ovadia Yosef zt"l):
For any food consumed, one must recite a "first blessing," such as the blessing of "Shehakol" or "Ha'etz." Even if consuming only a small amount, the blessing is required, as long as the intention is to eat it for nourishment. (However, if just tasting food to adjust seasoning, for example, no blessing is required.) Therefore, even when chewing flavored gum with minimal swallowing, one must bless for enjoying its taste. Similarly, for drinking, a blessing is needed even for just a single drop.
This applies only to the first blessing. A last blessing is recited only when "significant eating" occurs, defined as eating the amount of an "olive size," approximately 27 grams, while for drinking, it is a "revi'it," which is approximately 81 grams.
Additionally, eating or drinking must occur within a time frame where the consumption is continuous. If one eats an olive size of bread throughout an entire day, piece by piece, it cannot warrant Birkat Hamazon. Instead, the olive size must be consumed within the time span of "Achilat Pras," with rabbis differing on its exact duration; some say five minutes, others about seven and a half minutes. Consequently, it is best to be cautious and consume an olive size (especially at Shabbat meals) within four and a half minutes to meet all views.
For the last blessing on beverages, a revi'it must be drunk in one go; if there is a pause between sips, a last blessing is not recited. Hence, sipping soup with a spoon or drinking hot coffee or tea in small sips does not call for a last blessing, as a revi'it is not consumed at once.
