The quantity of food required to mandate an after-blessing (from "Daily Halacha" by the rulings of the late Rabbi Ovadia Yosef):
For anything a person eats, one must say the "blessing before eating," such as "Shehakol" or "Ha'etz." Even if one eats only a small amount of that food, they must still bless it, as long as they intend to eat. (However, if one just tastes the food to correct it with spices, there is no blessing on this tasting at all). Therefore, someone who chews flavored gum, even if they swallow very little, still must bless for the enjoyment of its taste. The same applies to someone who drinks even a drop of any beverage; they must bless it.
This applies specifically to the initial blessing, but the after-blessing is only recited when one has had a "significant eating," which is the amount of a "Kezayit," meaning 27 grams. For drinks, this is a "Revi'it," which is 81 grams.
Additionally, eating or drinking must occur within a timeframe that the consumption counts as one unit. If one were to consume an amount equivalent to a "Kezayit" of bread crumb by crumb throughout the day, they could not recite Birkat Hamazon. The eating of a "Kezayit" should be completed within the time of "Achilat Pras." Opinions differ on this duration, with some saying five minutes and others seven and a half (with other opinions, too). Thus, it is advisable to always eat a "Kezayit" (especially at Shabbat meals) within four and a half minutes to fulfill all opinions.
Regarding an after-blessing for drinks, one must consume a Revi'it of the beverage (81 grams) in one go. If they drank and paused between sips, they do not recite an after-blessing. Therefore, someone sipping soup with a spoon doesn't bless afterwards since they haven't consumed a Revi'it at once. Likewise, someone drinking hot tea or coffee won't bless afterwards, as they can't drink it in one go.
