The quantity of food required to be obligated in a concluding blessing (from "Halacha Yomit" based on the rulings of Maran Rabbi Ovadia Yosef, of righteous memory):
For everything a person eats, they must recite an "initial blessing," such as the blessing "Shehakol" or "Ha'etz." Even if one consumes only a small amount of food, they must still recite the blessing if they intend to eat the food. (However, if they only taste the food to adjust seasoning, etc., they do not bless at all for this act of eating). Likewise, one who chews flavored chewing gum must bless for the enjoyment of the flavor, regardless of how little they swallow. The same applies to drinking, even a single drop requires a blessing.
This is specific to the initial blessing though. As for the concluding blessing, it is only recited if a "significant amount" is consumed. This significant amount is the measure of "k'zayit" (an olive's volume), which is twenty-seven grams. In drinking, the amount is a "revi'it," which is eighty-one grams.
Additionally, the eating or drinking must occur within a timeframe where the consumption counts collectively. For instance, if one eats a k'zayit of bread throughout the entire day, piece by piece, they certainly cannot recite a concluding blessing afterward. The entire k'zayit should be consumed within the period of "Achilat Pras." Opinions vary on how long this is; some say five minutes, others say seven and a half (there are more opinions). It is advisable to consume a k'zayit, especially during Shabbat meals, within four and a half minutes to fulfill all opinions.
Concerning a concluding blessing over drinks, a revi'it (eighty-one grams) must be consumed at once. If interrupted between sips, no concluding blessing is recited. Therefore, someone drinking soup with a spoon does not recite a concluding blessing on the soup, as they did not consume a revi'it at once. Similarly, those drinking hot coffee or tea do not recite a concluding blessing, as they cannot drink it all at once.
