Overcarrot, one recites the blessing of "Ha'adama" (first blessing)

And at the end of eating, one recites "Borei Nefashot" (final blessing)

The amount of consumption required to be liable for the final blessing (from the "Daily Halacha" rulings of Maran Rabbi Ovadia Yosef, of blessed memory):

For anything a person eats, one must recite the "first blessing" on it, such as the blessing of "Shehakol" or "Ha'etz." Even if one eats only a little of that food, one is obligated to bless on it, as long as one intends to eat it for eating's sake. (However, if one only intends to taste the food to adjust flavors with seasoning, for example, one does not bless on this tasting at all). Therefore, someone who chews flavored chewing gum, even if they swallow very little of it, still must bless for the enjoyment of the gum's flavor. Similarly, one coming to drink anything must bless over it, even if they plan to drink just a drop of that beverage.

However, this applies only to the first blessing, but the final blessing is only recited when one has eaten a "significant amount," and the measure of a significant amount is the measure of a "kezayit," namely twenty-seven grams, and for drinking, the measure is a "revi'it," which is eighty-one grams.

Additionally, the eating or drinking must occur within a time frame where the consumption is considered continuous. For instance, if one eats a "kezayit" of bread throughout an entire day, piece by piece, they certainly cannot bless the Grace After Meals afterward. Instead, the consumption of a "kezayit" must be within the time frame known as "Kedei Achilat Pras," and there is a disagreement among the poskim (halachic deciders) on this time frame. Some say it's five minutes, while others say it's about seven and a half minutes (and there are other opinions as well). Therefore, it is wise to always consume a "kezayit" (especially during Shabbat meals) within four and a half minutes to fulfill all opinions.

As for the final blessing on a drink, one must drink a "revi'it" of the beverage (which is eighty-one grams) at once, because if there is a pause between sips, one does not bless the final blessing at all. Therefore, someone who drinks soup with a spoon does not bless the final blessing on that soup, because they did not drink a "revi'it" at once. Likewise, someone drinking coffee or tea while it is hot does not recite a final blessing, as they cannot drink it all at once.
