What’s the Official Answer?
According to the FDA, hard-boiled eggs can safely be stored in the refrigerator at a temperature of 4°C (40°F) or below for up to 7 days — but not a day longer.
Where and How Should You Store Them?
The FDA recommends storing hard-boiled eggs in a sealed container placed in the coldest part of the fridge, typically the bottom shelf near the back. Avoid keeping them in the refrigerator door, where the temperature fluctuates more.
What If the Eggs Were Left Out?
If your hard-boiled eggs have been sitting at room temperature for more than 2 hours, especially on a hot summer day, don’t risk it. Bacteria multiply rapidly at warmer temperatures, and eating them could lead to foodborne illness.
