Why is it a bad idea to store opened canned goods in the fridge for later use? From a health perspective, it turns out to be a poor choice, and here's why:
Once you've opened a can and used half of the contents, you might want to store the leftovers in the fridge. This is where the big mistake begins.
Canned goods are sealed airtight, preventing oxygen from entering and compromising the food's quality. Once you remove the metal lid, the food comes into contact with oxygen, altering its taste, making it odd, and less delicious, and it spoils quickly.

How Should You Properly Store Leftover Canned Goods?
The contact between oxygen, metal, and food negatively affects the food's quality, so it's best to avoid storing open cans in the fridge.
If you insist on refrigerating the contents, the solution, according to the United States Department of Agriculture, is to consume small amounts of canned foods stored in the fridge within 4 days. After this period (or preferably from the start), it's recommended to transfer the leftovers to a sealed glass or plastic container.
